Dairy-Free Waffles
We are always on the lookout for new recipe ideas for a fun, delicious, and simple weekend breakfast or brunch. Traditionally, we reserve our Sundays for pancakes in all shapes and forms, but lately, the kids have been loving waffles. These dairy-free waffles are golden-brown, crispy, and delicious on the outside while soft, fluffy, and sweet inside. This recipe doesn't use yeast, making it quick and simple. Instead of using milk and butter, we opted for almond milk and coconut oil, which also add a lot of flavor to the waffles. Serve with your favorite toppings; we like to keep it simple with fresh berries and maple syrup.

Add almond milk, eggs, and coconut oil to a bowl. Using a whisk, mix to combine and set aside. Add all-purpose flour, vanilla sugar, sugar, and baking powder to a separate bowl and stir with a spatula to combine. Gradually add the almond milk mixture to the flour mixture and mix with a whisk until smooth.

Pour batter into a preheated prepared waffle iron. Cook until golden brown and crispy on both sides. Serve with maple syrup and fresh berries.
